Mile High Potatoes
Ingredients:
Russet potatoes
Shredded cheddar cheese
Butter
Bacon
Johnny’s seasoning salt
Garlic powder
Garlic pepper seasoning
Pepper
Italian seasoning
Chopped green onionsAdditional sides:
Sour cream
Salsa
Pickled jalapeños
Hot sauceFor this particular dish I used 5 russet potatoes. However, you can use just about any potatoes. Cut your potatoes and leave the skin on. After you’ve cut the potatoes, lay it on a pan. Take your two sticks of butter, place into a cup or bowl and throw it into the microwave until its fully melted. You will now take your melted butter and drizzle all over the potatoes. Make sure that it is fully coated. Take your seasoning salt, garlic powder, garlic pepper seasoning, pepper, Italian seasoning and begin to sprinkle over the potatoes. I don’t measure my seasonings I just improv and throw in the seasonings according to my taste preference. Give it a good mix. You will now bake it into the oven at 400 degrees for about 45-60 mins (until tender) pan fry your bacon, once cooked chop to your preferred size and set to the side. Once it’s tender enough, taste your potatoes and adjust the seasonings to your liking. You will now spread your shredded cheese over the potatoes along with your bacon pieces. Throw back into the oven for about 3-5mins until melted. Now take your green onions and top it over your mile high potatoes. Bring to the table and serve with the following if you like— sour cream, hot sauce, jalapeños or salsa.
